Ingredients

1/2 lb Spaghetti

1 tbsp Vegan butter

1/2 cup Sun-dried tomatoes (chopped)

1 tsp Italian seasoning

2 cups Vegetable broth

1/2 cup Oat cream (or heavy cream)

2 tbsp Vegan cream cheese

1/4 cup Vegan parmesan

Fresh basil & chili flakes to taste

Directions

Melt butter in a large pan. Lay spaghetti flat, add seasoning and sun-dried tomatoes.

Pour in broth, cover, and simmer for 5-7 mins.

Stir in the cream, cream cheese, and parmesan.

Toss over medium heat until the sauce is glossy and "hugs" the pasta.

Finish with fresh basil and an extra squeeze of lemon if you’re feeling fancy!
