HONEY SRIRACHA SHRIMP MEAL PREP

1 cup uncooked rice
450g Argentine red shrimp raw frozen, thawed
1/4 tsp salt
1/4 tsp pepper
1/2 tsp red pepper flakes
1/3 second spray oil
2 tbsp honey
2 tbsp soy sauce
2 tbsp sriracha sauce
1.5 tsp olive oil
1 tsp cornstarch
2 tsp water (for cornstarch slurry)
1/3 cup frozen Edamame, thawed
400g cucumber
4 tbsp green onions
Instruções
1 Dice your green onions, slice your cucumber, and peel your edamame
2 Thaw your frozen raw shrimp, pat dry, and season with red pepper flakes, salt, and black pepper
On a pan coated with spray oil on medium-low heat, cook your shrimp until it turns to a light orange/pink color (fully cooked). Remove the cooked shrimp and set aside 4 In a bowl, mix your soy sauce, honey, siracha, and olive oil to make your sauce.
5 In a new pan on low heat, pour this sauce mixture into the pan.
6 Immediately follow by pouring in your cornstarch slurry, which is a mixture of 1 tsp cornstarch and 2 tsp water in a small bowl. Mix the cornstarch slurry into the sauce to let it thicken a little to turn into a glaze, then immediately remove from the heat.
7 In a bowl, add your cooked shrimp, pour your slightly thickened sauce, and mix well.
8 In a meal prep container, add your cooked rice, shrimp, edamame, diced green onions, and cucumber slices and enjoy!
Notas
This full recipe is intended to be split into 4 even meal prep containers, but for larger portions, you can also choose to split it into 2 even meals (you'd just have to double the macros/calories since youd be eating double the intended serving size)!
