Orange Chicken

Ingredientes

  • 1 lb chicken thighs

  • 1 T plus 1 t ginger

  • 5 cloves garlic

  • 1 egg white

  • 3 T soy sauce

  • 1 T Shaoxing wine

  • 1 t sesame oil

  • 3 T cornstarch

  • 2 t pepper

  • 1 t salt

  • 1 orange

  • 1/4 c orange juice

  • 1 c chicken broth

  • 2 T brown sugar

  • 1 T rice vinegar

  • 1 t apple cider vinegar

  • 1/4 c flour

  • 1 t baking powder

Instruções

1. Cut 1 lb. chicken thighs into bite sized pieces.

2. Make a marinade with 1 t ginger, 2 cloves garlic, 1 egg white, 1 T soy sauce, 1 T Shaoxing wine, 1 t sesame oil, 1 T cornstarch, 1 t pepper, zest of half an orange. Put chicken in marinade bowl and set aside.

3. To make the sauce, add zest of half an orange, 1/4 orange juice, 2 T soy sauce, 1 cup chicken broth, 1 T grated ginger, 3 cloves garlic, 2 T brown sugar, 1 T rice vinegar, 1 t apple cider vinegar.

4. To make the dredge, add 1/4 c flour, 2 T cornstarch, 1 t baking powder, 1 t pepper, and 1 t salt. Dredge each piece of chicken.

5. Heat canola oil in a pan, enough to deep fry chicken pieces.

6. Add chicken to hot oil in a single layer and cook each side 3-4 minutes. (You may need to cook the chicken in batches to avoid

overcrowding.)

7. Turn up heat to high and re-add the chicken for a one minute double

fry.

8. Remove the oil from the pan and add in sauce. Let it boil and start to reduce. Add cornstarch and water mix to thicken sauce.

9. When sauce is pretty much thickened, add back in chicken to heat. 10. Serve with rice and garnish with green onion.
