Chilled Tomato & Sesame Salad (Izakaya Style)
Ingredients (Serves 2–3)
• 1 large heirloom tomato (or 2 medium tomatoes), cut into wedges or thick slices
• 1 tablespoon finely diced onion, soaked in cold water for 10 minutes then drained
• 1/2 teaspoon grated fresh ginger
• 1/2 teaspoon salt
a small pinch of MSG
• 1 teaspoon soy sauce
• 1 teaspoon rice vinegar
• 1 teaspoon sesame oil
• 1 teaspoon avocado oil
• 1 tablespoon toasted white sesame seeds
Optional Add-ons:
• Shiso leaves, chiffonade
• Chilled silken tofu cubes
• Thin cucumber slices
• Crushed ice (for plating)

Instructions
1 Chill the tomato
Slice the tomato into wedges or chunks and chill in the fridge for at least 15–20 minutes.
2 Make the dressing
In a small bowl, combine soy sauce, rice vinegar, sesame oil, avocado oil, grated ginger, and umami salt. Stir well.
3 Assemble
Arrange chilled tomatoes on a plate. Scatter soaked onions over the top. Drizzle with the dressing.
4 Finish
Sprinkle with toasted sesame seeds and optional shiso. Serve immediately.
