Sheet Pan Sesame Chicken

2 (12-ounce) bags frozen stir-fry vegetables
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil
FOR THE SESAME-GINGER SAUCE
½ cup low-sodium soy sauce
¼ cup rice vinegar
1 tablespoon sesame oil
2 tablespoons cornstarch
1 tablespoon sesame seeds
1 tablespoon grated fresh ginger
1½ teaspoons chopped garlic
2 tablespoons light brown sugar
Instruções
Preheat the oven to 350°F.
Prepare the chicken and vegetables: On a large rimmed sheet pan, toss the frozen vegetables and chicken with oil. Roast in the oven for 15 minutes.
Meanwhile, make the sesame-ginger sauce: In a medium bowl, whisk together the soy sauce, rice vinegar, sesame oil, cornstarch, sesame seeds, ginger, garlic, and brown sugar.
Remove the chicken and vegetables from the oven and drizzle the sesame-ginger sauce on top. Toss the mixture to combine and spread it in an even layer.
Return the sheet pan to the oven and continue to roast for another 10 minutes, until the chicken is cooked through, the sauce is slightly thickened, and the vegetables are tender but not mushy. Serve hot, with rice if desired, and store leftovers in the refrigerator for up to 4 days.
