4 russet potatoes
4Tbsp salted butter
3 egg yolks
Salt & White Pepper
1 large leek
2 shallots
1/2 bulb fennel
1lb fish of your choice
2Tbsp AP flour
2Tbsp butter
1Tbsp @algaecookingclub oil
1Tbsp chopped dill
1Tbsp chopped parsley
1/2Tbsp chopped tarragon
1 ½ cups milk
1 cup cream
Zest 1/2 lemon
Salt & White pepper to taste
1/4tsp grated nutmeg
Saute veg until leeks are tender
Instruções
Add flour and cook for 2 minutes
Slowly whisk in milk, once incorporated whisk in cream
Cook for 3 minutes until thickened
Add fish, zest, herbs, stir in well and turn off heat
Make mashed potato as seen
Assemble and bake at 375f for 35 minutes or until golden brown
