Ingredientes

1 tbsp olive oil

700g packet free range Irish oyster cut chicken thighs

700g packet free range Irish

chicken drumsticks

knob of butter

150g packet Irish bacon lardons

2 garlic cloves, finely chopped

1 large onion, finely chopped

170g Irish baby button mushrooms, halved

1 tsp fresh thyme leaves, plus extra to garnish

2 glasses white wine

200m! cream

Chopped fresh flat-leaf parsley, to garnish

Creamy mashed potatoes with chives and long stemmed broccoli, to serve

Instruções

Heat the oil in a casserole dish over a high heat. Add the chicken and brown all over until golden. Put on a plate. Reduce the heat and add the butter. Tip in the bacon and fry until crisp. Add the garlic, onion and mushrooms and fry for 3-4 mins. Put the chicken back in and then stir in the wine and thyme. Bring to the boil, then reduce the heat and simmer gently for 15 minutes. Stir in the cream and season xvith salt and pepper, then cook for another 10-15 minutes until tender. Scatter over the parsley and serve to the table with the potatoes and broccoli.
