Tomatillo salsa

400g tomatillos
small pack coriander
1 white onion, chopped chopped
1 garlic clove, roughly chopped
1 lime, juiced
1 avocado, cut into small cubes
Instruções
Put the tomatillos in a pan of boilingwater, cook for 3 mins or until the skins split, remove with a slotted spoon and cool for 5-10 mins. Blitz in a food processor with the coriander, onion, chilli, garlic and lime. Tip into a bowl, stir in the avocado and season to taste.
Notas
The perfect condiment for a Mexican feast. If you can't find tomatillos, use under-ripe or green tomatoes.
