Mushroom "Philly Cheesesteak” Sandwiches

2 Tbsp olive oil
1 medium onion, sliced
4 large portobello mushrooms, sliced OR 8 oz cremini mushrooms, sliced
1 large red bell pepper, thinly sliced
2 tsp dried oregano
½ tsp freshly ground pepper
1 Tbsp all-purpose flour
¼ cup vegetable broth, or low-sodium chicken broth
2 Tbsp low-sodium soy sauce
4 slices provolone cheese
4 buns (any kind)
Large handful of spinach
Instruções
Heat oil in large skillet over medium-high heat.
Add onion and cook, stirring often, until soft and beginning to brown.
Add mushrooms, bell pepper, oregano and pepper and cook, stirring often, until the vegetables are wilted and soft.
While vegetables are cooking, split buns and toast (under broiler or on grill).
Remove from heat and place toasted buns opened-sides-up on sheet pan with few spinach leaves on top.
Reduce vegetable heat to low; sprinkle with flour and stir to coat.
Stir in broth and soy sauce; bring to a simmer.
Remove from heat. Divide the mixture into 4 portions and scoop each onto a toasted bun.
Lay slice of cheese on top of each bun. Let stand until melted or speed the melting by broiling for 1 minute.
Notas
From Rachel: if the veggie mixture is too dry, skip the flour and add more broth. If too wet, turn the heat high for a couple minutes to cook off the extra fluid.
