Vegetable Beef Casserole

Ingredientes

3 medium potatoes, peeled and sliced

3 carrots, sliced

3 celery ribs, sliced

2 cups fresh, frozen or canned-drained green beans

3/4 cup onion, chopped

1 pound hamburger

1/2 teaspoon dried thyme

Salt and pepper

8 medium tomatoes, peeled, seeded and chopped or 2 cans stewed tomatoes or diced tomatoes

1 cup (4 oz) shredded cheddar cheese

Instruções

In 9x13 glass greased baking dish, layer half the potatoes, carrots, celery, green beans and onion. Sprinkle with salt generously. Crumble half of the uncooked beef over the vegetables. Sprinkle with 1/4 tsp thyme, pepper and more salt. Repeat layers. Top with tomatoes. Cover and bake at 400 for 15 minutes. Reduce heat to 350 and bake about 1 hour or longer until vegetables are tender and meat is done. Sprinkle with cheese; cover and let stand until cheese is melted.

Notas

The recipe only said 4 medium tomatoes but it has more flavor with more tomatoes I discovered. It is important to be generous with the salt over every layer and a lean hamburger is much better to avoid the grease.
