Spicy stuffed onions

Ingredientes

16 small red onions

25g butter

1tbsp olive oil

1tbsp rosemary, chopped

1tbsp thyme leaves, chopped

3tbsp flat-leaf parsley, chopped

2tsp ras-el-hanout spice

½tsp cumin powder

300g sausage meat

50g dried apricots, chopped

Instruções

1 Cut the tops and bottoms off the onions. Scoop out the middle, then chop the flesh into small chunks.

2 Heat the butter and olive oil and fry the onion flesh until softened. Add the rosemary, thyme, parsley, ras-el-hanout and cumin. Heat the oven to 180C/Gas Mark 4.

3 Mix in the sausage meat and apricots. Put the onion shells in a roasting tin, brush the outsides with oil and fill with the stuffing. Cover with the foil and roast for 20mins, removing the foil for the last 5mins.
