No Cook Mango Fool

2½ cups chopped mango (from about 3) (Kent or Keitt Mangos work best)
2 tablespoons sugar
⅓ cup cold heavy whipping cream
½ teaspoon vanilla extract
⅓ cup 0% Greek yogurt
Instruções
Reserve ½ cup of the mango and pulse the remaining 2 cups in a blender until slightly pureed.
Place a small metal bowl and the whisk attachments of an electric hand mixer in the freezer for 10 to 15 minutes.
Remove the bowl and whisk from the freezer, and place the sugar, cream, and vanilla into the bowl. Using the hand mixer, beat at medium speed until the mixture holds stiff peaks, 2 to 3 minutes. Beat in the yogurt until incorporated, about 15 seconds.
Divide half of the mango puree among 4 small glass jars or cups. Divide the whipped cream among them and top with the remaining mango puree. Garnish with the reserved chopped mango. Chill in the refrigerator and serve.
