BRAZILIAN PRAWN SOUP

2 Tbsp olive oil
1 brown onion
1 green or red capsicum
3 cloves of garlic
125 gms long grain rice
0.25 tsp red pepper flakes
1 tsp salt
500 gms canned crushed tomatoes
1.25 litres prawn stock
250 mls coconut milk - unsweetened
750 gms green prawns - medium sized
0.25 tsp ground black pepper
1 Tbsp lemon juice
125 gms coriander leaves - chopped
Instruções
In a large pot heat the oil over a moderately low heat. Add the onion, capsicum and garlic. Cook, stirring occasionally, until the vegetables start to soften. About 10 minutes.
Add the rice, red pepper flakes, salt, tomatoes and stock to the pot. Bring to the boil and cook until the rice is almost tender. About 10 minutes.
Stir the coconut milk into the soup. Bring back to a simmer and then stir in the green prawns. Simmer, stirring occasionally, until the prawns are only just cooked. About 3-5 minutes.
Stir in the black pepper, lemon juice and coriander.
Notas
Variation. Instead of the prawns use 500gms of boneless, skinless chicken thighs cut into 1 cm strips. Otherwise the same.
