White Chicken & Bean Chili

2 tablespoons olive oil
1 white or yellow onion (finely diced)
1 tablespoon minced garlic
8 ounces diced green chilis (from a can)
3/4 teaspoon dried oregano
1/2 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
2-2 1/2 cups low sodium chicken broth
2 15 ounce cans great northern beans (drained and rinsed)
1/4 cup plain greek yogurt or sour cream
2 1/2 cups shredded rotisserie chicken
1 tablespoon lime juice
cilantro, avocado & tortilla chips for topping
Instruções
heat oil
In a large pot or dutch oven, heat the olive oil over medium heat.
saute onion
Add in the diced onion and saute for about 7-8 minutes, stirring occasionally.
add chilis
Add in the garlic and green chilis and saute for 2-3 more minutes.
add spices
Mix in the spices, salt and pepper.
add all ingredients
Add in all remaining ingredients aside from the chicken. Start with 2 cups of broth and add more as desired to thin.
blend
Let simmer for a few minutes to let the flavors blend, then scoop out 1 - 1 1/2 cups and blend until smooth.
add to pot
Transfer back to the pot and stir in the chicken.
simmer
Simmer for 10-15 minutes over low heat. If you prefer a thinner consistency, mix in an additional 1/2 cup of broth.
serve
Stir in the lime juice. Serve with fresh cilantro, tortilla chips & enjoy!
