Pork chops with apple mash

500g floury potatoes , peeled and chopped
1 large cooking apple , peeled, cored and chopped into small cubes
butter
2 pork chops , about 200g each
olive oil
175ml white wine
150g green beans , cooked to serve
Instruções
1. Simmer the potatoes in boiling water until tender, drain. Cook the apple pieces in a little butter and a splash of water until tender. Mash the apples and potato together and season.
2. Heat a non-stick frying pan until very hot. Rub over oil and season the pork chops. Sear the chops for 3-4 minutes on each side until browned and cooked through. Remove from the pan to rest under foil, then tip in the wine and boil hard for a few minutes until reduced by 1/2. Whisk in a knob of butter and season. Serve the chops with the mash, beans and pan juices.
