1 chipotle pepper + 1 t adobo sauce
21/2 t ancho chili powder
2 t cumin
1 t oregano
1/2 t cayenne pepper
1/2 t onion powder
1 t salt
1 t freshly ground black pepper
3 garlic cloves, peeled
1/4 cup vegetable oil
1# flank or skirt steak
2 cups cooked rice, warm
2 T fresh lime juice
1 t vegetable oil
2 T fresh chopped cilantro
1/4 t salt
INGREDIENTS FOR CILANTRO LIME RICE: (DOUBLE THIS)
2 cups cooked rice, warm
2 T fresh lime juice
1 t vegetable oil
2 T fresh chopped cilantro
1/4 t salt
INGREDIENTS FOR CORN SALSA: (DOUBLE THIS)
1 12 oz pkg frozen sweet corn, or 1 1/2 cups fresh kernals
1 jalepeno, seeded and chopped
1/2 red onion, finely chopped
1/4 cup freshly chopped cilantro
1 T fresh lime juice
1/4 t salt
Instruções
STEAK:
Combine all ingredients except steak in blender; blend until well combined.
Place steak in airtight container and cover with sauce, Seal and marinate overnight.
RICE:
Place cooked rice in bowl and toss with other ingredients. Keep warm until ready to use.
CORN SALSA:
Combine all ingredients in a bowl.
Taste and adjust ingredients and seasoning as needed.
Refrigerate until ready to use, up to 1 day.
Notas
Optional add ins: Black or pinto beans (rinsed and warmed), salsa, shredded Monterey Jack cheese, sour cream, avocados or guacamole.
