Thai Basil Tofu

Ingredientes

Firm tofu @tofoo

1 chilli

5 garlic cloves

1 shallot

1 tsp ginger

Thai basil

1 tbsp cornflour

Optional veg e.g. I used up some runner beans I had. Peppers would also be good!

Jasmine rice & fried egg to serve

Optional garnishes: spring onion, chilli oil & sesame seeds

Sauce:

1-2 tbsp oyster sauce

2 tbsp light soy sauce

1 tbsp dark soy sauce

2 tsp brown sugar

Sprinkle of white pepper

Optional 1 tsp chilli flakes for extra spice

Instruções

Preheat oven to 220°C. Pat the tofu dry and crumble into small pieces in a baking tray. Toss with oil, salt, pepper, and cornflour. Bake for 20–25 minutes, shaking halfway.

While the tofu bakes, prepare the sauce.

Heat a little oil in a pan and sauté diced garlic, ginger, shallots, and chilli until fragrant. Add chopped runner beans or veg of choice and cook until tender.

Stir in the baked tofu, sauce and shredded Thai basil.

Serve hot with rice, a fried egg, and a drizzle of chilli oil.
