Cottage Cheese & Spinach Crustless Quiche

1 cup cottage cheese
1 cup fresh spinach, chopped (or ½ cup frozen, thawed and drained)
4 large eggs
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
¼ cup milk (or cream for richer texture)
1 small onion, finely chopped
1 clove garlic, minced
1 tablespoon olive oil or butter
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon dried oregano or Italian seasoning
Optional: pinch of nutmeg or red pepper flakes
Instruções
Preheat the oven
Preheat your oven to 180°C (350°F). Lightly grease a 9-inch baking dish or pie pan.
Cook the vegetables
Heat olive oil in a skillet over medium heat.
Add chopped onion and cook for 3–4 minutes until soft.
Add garlic and spinach and cook for 1–2 minutes until wilted. Remove from heat.
Mix the egg base
In a large bowl whisk together:
eggs
cottage cheese
milk
mozzarella
Parmesan
salt, pepper, and oregano
Combine
Stir the cooked spinach mixture into the egg mixture and mix well.
Bake
Pour the mixture into the prepared baking dish.
Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
Rest & serve
Let the quiche rest for 5–10 minutes before slicing. This helps it firm up.

Tips
Drain spinach well to avoid a watery quiche.
For extra flavor add feta cheese or cheddar.
