Broccoli Pasta E Ceci

Ingredientes

3-4 tbsp olive oil

5 large cloves garlic, minced

Zest of 1 lemon

1/2 tsp black pepper

1 tsp italian seasoning

1/4 tsp red chili flakes

1 small broccoli head, chopped small (about 2 cups)

1 cup dry ditalini pasta

1 can chickpeas, drained and rinsed

1/2- 2/3 cup dry white wine

6 cups vegan chicken broth or veggie broth

1/2 lemon, juiced

Toppings:

olive oil

vegan Parmesan

Instruções

In a pot or skillet on medium heat add olive oil and garlic. Once hot add lemon zest, black pepper, Italian seasoning, and red chili flakes. Cook until the garlic is fragrant.

Add dry pasta and stir to coat in the oil. Add the chickpeas, white wine, and broth. Bring the mixture to a simmer and cook until the pasta is al dente. Just before it’s done, add the broccoli and cook until just tender (it will be quick). Remove from heat and add lemon juice. Salt if needed!

Serve with a drizzle of olive oil and plenty of vegan Parmesan.
