Mediterranean Chicken & Couscous One-pot Air Fryer Tray

4 chicken thighs
2 packs Mediterranean roasting veg (tomatoes, red onion, red peppers & courgettes)
600g fine couscous
250ml water
1 tbsp tomato purée
2 tbsp extra virgin olive oil
1 tbsp oregano
1-2 bay leaves
1 tbsp lemon & herb Mediterranean seasoning
1 tbsp lemon & herb paste
1 tbsp adobo complete seasoning
1 tbsp garlic & mixed herbs seasoning
1 tbsp finely chopped garlic (or lazy garlic)
1 tbsp chicken stock powder
1 Maggi chicken stock cube
Juice of ½ lemon
To serve
Aioli, hummus or tzatziki
Fresh parsley
Instruções
In a tray that fits your air fryer add the vegetables, tomato purée, olive oil, lemon juice, garlic and all the seasonings. Mix well.
Place the chicken thighs on top and had a 1/4 cup of water
Cover with parchment paper then foil and cook using the bake setting at 180°C for 1 hour.
Remove the chicken and set aside. Blitz the roasted vegetables until smooth.
Stir the couscous into the vegetable mixture, crumble in the Maggi cube and add the 200ml water. Mix well.
Cover again with parchment and foil and air fry at 180°C for 15 minutes.
Place the chicken back on top and cook uncovered for a final 15 minutes at 180°C until golden.
Fluff the couscous, place the chicken on top and finish with parsley and a dollop of aioli, hummus or tzatziki.
