Creamy Roasted Garlic Steak Tortellini (the Ultimate Comfort

For the Steak:
1 lb sirloin or ribeye steak, cut into bite-size pieces
1 tbsp olive oil
½ tsp garlic powder
Salt & black pepper, to taste
For the Roasted Tomatoes:
1 ½ cups cherry tomatoes
1 tbsp olive oil
3 cloves garlic (whole, unpeeled)
Salt & black pepper, to taste
For the Sauce & Pasta:
12 oz cheese tortellini (fresh or refrigerated)
3 tbsp unsalted butter
3 cloves roasted garlic (from above), peeled & mashed
¾ cup heavy cream
½ cup grated Parmesan cheese
½ tsp Italian seasoning
¼ tsp crushed red pepper flakes (optional)
1 tbsp chopped fresh basil (plus more for garnish)
Instruções
Roast Tomatoes & Garlic:
Preheat oven to 425°F (220°C). On a baking sheet, toss cherry tomatoes and whole garlic cloves with olive oil, salt, and pepper. Roast for 15–20 minutes until blistered and caramelized. Set aside.
Cook Tortellini:
Boil in salted water until al dente, then drain and set aside.
Sear the Steak:
Pat steak dry and season with garlic powder, salt, and pepper.
Heat olive oil in a skillet and sear 2–3 minutes per side until browned. Remove and set aside.
Make the Sauce:
In the same skillet, melt butter over medium heat.
Mash in roasted garlic cloves and stir until golden. Add the roasted tomatoes and gently crush them with a spatula.
Pour in heavy cream, stir, and bring to a simmer.
Add Cheese & Seasoning:
Whisk in Parmesan until smooth, then stir in Italian seasoning and red pepper flakes.
Combine Everything:
Toss in the cooked tortellini and steak bites. Add a splash of pasta water if needed. Stir gently until creamy and well coated.
Serve:
Top with chopped basil and extra Parmesan.
