Spiced chicken pilaf

Ingredientes

2tbsp olive oil

1 large red onion, chopped

1 red and 1 yellow pepper, halved, deseeded and sliced

1 red chilli, finely sliced

350g basmati rice

700ml hot chicken stock

100g sultanas

2tbsp jerk seasoning

zest and juice of I orange

3 chicken breasts, skins on a good handful of fresh flat-leaf parsley and mint, chopped

4tbsp natural yogurt, to serve

Instruções

1 Heat half the oil in a large casserole, add the onion and peppers, and sweat on a low heat for 5mins. Add the chilli and rice and stir well to coat the grains.

2 Add the stock and sultanas. Bring to a boil, stir once, then cover and turn down the heat to its lowest setting. Cook undisturbed for 18-20mins (don't stir), until all the liquid has been absorbed and the rice is soft.

3 Mix together the remaining oil with the jerk seasoning and orange juice, and rub over the chicken. Heat the grill and cook the chicken, skin-side down, for 5mins, then turn and grill for 10mins until cooked through.

4 Fork the orange zest through the rice with most of the herbs. Slice the chicken and arrange on top of the rice. Top with the yogurt and remaining herbs.
