CHICKEN, HAM & POTATO SOUP

1 Kg potatoes - 1 cm dice
1 medium onion - diced
60 gms celery - thinly sliced
1 litre chicken stock
1 can of cream of chicken soup
2 tsp cracked black pepper
Salt to taste
250 gms lardons
125 gms Philadelphia cream cheese
Garnish
Shredded cheese
Crumbled cooked bacon
Instruções
Parboil the diced potatoes in salted water for about 7 minutes. Drain and set aside.
In a large soup pan, stir together chicken or ham broth and can of cream of chicken or ham soup, then stir in the diced onion, thin celery slices, lardons and pepper.
Cook on medium heat about 15 – 20 minutes, until potatoes are cooked through. Put the soup through a blender or just mash to the desired consistency.
Add in the softened cream cheese. I mashed it on a paper plate and put in the microwave for 15-20 seconds, so that it is soft enough to melt in the soup quickly.
Stir into the hot soup and continue cooking for another 30 minutes.
Garnish with shredded cheese and crumbled, crisp bacon.
