Mediterranean Lemony Garlicky Chicken

If you love easy, ridiculously good meals, you’ve gotta give this a try. This one feels like the bigger, bolder brother to the One-Dish Lemony Chicken Bake from my cookbook (page 119 if you’ve got it!). This version leans rustic and Mediterranean with tomato paste, lots of garlic, and a cooling yogurt sauce to tie it all together.

Here is how I made it:
1.Add 5 chicken thighs to a bowl. I like these with skin and bone during cooking for flavor, but you can go without, or remove them before eating.
2.In a separate bowl, mix 5 tbsp olive oil, the juice & zest of 2 lemons, 2 tbsp tomato paste, 6-8 minced garlic cloves, 2 tbsp finely chopped fresh parsley, 1 tbsp sweet paprika, 1/2 tbsp chili flakes or Aleppo pepper & generous pinches of salt . Give it a good mix, then add 3/4 of it to the chicken and coat evenly. Reserve the remaining 1/4 to brush on the chicken later.
3.Let marinate for at least 2 hrs (or overnight) to soak up the flavors, this step is important! Then, remove from the fridge and let it come up to room temp before popping into the oven.
4.Grab an oven safe dish. Slice a large yellow onion put the slices at the bottom. Place the chicken on top, I shaved fresh parmesan on top, but its optional. Pop in the oven at 400F for 40 mins. At 40 mins, remove the chicken, brush with the remaining mixture, and put back in the oven for 7-10 mins.
5.For the simple yogurt base, I mixed 1 cup Greek yogurt with 1 minced garlic clove, the juice and zest of half a lemon, and a generous pinch of salt. Add 1-2 spoonfuls to the bottom of a serving dish, top with cooked chicken, spoon over some of the juices, add some more fresh parmesan (optional) & fresh chopped parsley.
6.You can make this more substantial with roasted veggies (broccoli or asparagus but if youre not watching carbs closely, potatoes would be heaven). You can add regular rice, or if you’re lowcarb, my high protein lowcarb kaizen rice.
