Tomato fish stew

Ingredientes

2 tbsp olive oil 1 onion, chopped 2 garlic doves, cmshed A handful of fresh parsley, chopped 1 x 400g tin of chopped tomatoes 2 tsp tomato puree 200ml fish stock 100ml white wine 600g cod fillets, cut into chunks

½ tsp dried oregano (or 1 tsp fresh)

½ tsp dried thyme (or 1 tsp fresh) A dash ofTabasco (if desired) Salt and black pepper To serve: Crusty bread

Instruções

1 Heat the olive oil in large saucepan over a medium-high heat. Add the onion and garlic and cook for four minutes.

2 Reduce the heat to medium and stir in the parsley. Cook for two minutes.

3 Add the tomatoes and tomato puree and cook for 10 minutes.

4 Add the fish stock, wine and cod pieces. Bring to a simmer and cook for 8-10 minutes until the cod is cooked through.

5 Stir in the oregano, thyme andTabasco (if using). Season and serve with crusty bread.
