Creamy, Spicy Tortellini and Sausage Soup

This one’s comfort in a bowl. Think creamy tomato soup meets cheesy tortellini meets the savory goodness of Italian sausage — all simmered together until it’s rich, silky, and perfectly cozy.

1 tbsp unsalted butter

1 tbsp olive oil

1 lb Italian sausage (hot or mild)

1 medium yellow onion, finely diced

2 stalks celery, finely diced (about ½ cup)

2 medium carrots, finely diced (about ½ cup)

6–8 cloves garlic, minced, to taste

1 tsp dried basil

1 tsp dried oregano

½ tsp dried thyme

½ tsp dried rosemary

1–2 tsp Calabrian chilies or red pepper flakes, to taste

3 tbsp tomato paste

3 tbsp all-purpose flour

½ cup dry white wine

28 oz crushed tomatoes

4 cups low-sodium chicken broth

1 Parmesan rind (optional)

1 bay leaf

½ cup heavy cream, room temperature

2 cups spinach (or kale for heartier texture)

10–12 oz cheese tortellini

1 cup freshly grated Parmesan, plus more to finish

Lemon zest or a squeeze of lemon juice (optional, for brightness)

Fresh basil, for garnish
