Honey Soy Pork Belly Bites with Potatoes and Broccolini

INGREDIENTS (serves 2)
400 g pork belly, chopped bite-sized
500 g potatoes, chopped bite-sized
1 bunch broccolini
Honey soy sauce
2 ½ tbsp soy sauce
2 ½ tbsp honey
1 ½ tsp rice vinegar (or white vinegar)
1 small garlic clove, minced
Optional: chilli crisp or chilli oil
Instruções
Chop pork belly, potatoes, and broccolini into bite-sized pieces.
In a small bowl, mix together soy sauce, honey, vinegar, garlic, and chilli crisp/oil if using. Set aside.
Add pork belly to a cold pan, skin side down. Cook on medium-high, rendering fat and searing all sides until golden and crisp, about 10 minutes. Remove from pan.
Steam broccolini until just tender green, about 3-4 minutes. Set aside.
In the same pan with pork fat, add potatoes. Cook on medium-high, add a splash of water, cover, and steam 12–15 minutes until fork-tender.
Remove lid and let excess moisture cook off.
Add pork belly and broccolini back to the pan.
Pour over the honey soy sauce and toss until everything is glossy and coated.
