450g plums, washed and
quartered
180g caster sugar
120ml cider vinegar
1 cinnamon stick
2 star anise
1 vanilla pod
Instruções
1 Place all ingredients except the plums in a
heavy-bottomed saucepan and bring to the boil,
ensuring that the sugar has dissolved.
2 Add the plums and reduce the heat. Cook for
approximately 25-30 minutes until the plums have broken down. Make sure and stir frequently so it doesn't stick to the bottom.
3 Remove the cinnamon, vanilla pod and star anise and allow the
chutney to cool.
4 Store in a sterilised, airtight jar for up to two weeks.
