•3 cups cooked and cooled jasmine rice (preferably day-old)
•2 tablespoons vegetable oil
•2 large eggs, beaten
•1 small onion, finely chopped
•2 cloves garlic, minced
•1 cup mixed vegetables (peas, carrots, and corn)
•2 green onions, chopped
•3 tablespoons soy sauce
•1-2 teaspoons fish sauce (adjust to taste)
•1 teaspoon sesame oil
•1/2 teaspoon white pepper (optional)
•Salt, to taste
Instruções
1.Prepare the Rice:
Cook the jasmine rice the day before or use leftover rice. Spread the rice out on a baking sheet to cool and dry out in the refrigerator overnight.
2.Cook the Eggs:
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from the wok and set aside.
3.Stir-Fry the Aromatics:
In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the chopped onion and garlic, and stir-fry for about 1-2 minutes until fragrant and translucent.
4.Add the Vegetables:
Add the mixed vegetables (peas, carrots, and corn) to the wok and stir-fry for another 2-3 minutes until they are tender but still crisp.
5.Combine Rice and Sauces:
Add the cooked rice to the wok. Break up any clumps and stir-fry to combine with the vegetables. Pour in the soy sauce, fish sauce, and sesame oil. Continue to stir-fry for another 2-3 minutes, ensuring the rice is evenly coated with the sauces.
6. Finish the Dish:
Add the scrambled eggs back into the wok, along with the chopped green onions. Stir-fry for another minute to combine everything thoroughly. Season with white pepper and salt to taste.
7. Serve:
Serve the fried rice hot, garnished with additional chopped green onions if desired.
