MUSTARD AND ROSEMARY LAMB CHOPS WITH GARLIC MASH

Ingredientes

900g potatoes, peeled and quartered

6 garlic cloves, peeled

4 tbsp olive oil

Salt and black pepper

4 tbsp fresh chives, chopped

2 tbsp fresh rosemary, chopped

1 tbsp Dijon mustard

8 Iamb chops

Instruções

1 Bring a large pan of salted water to the boil and cook the potatoes with four of the garlic cloves for about 15 minutes or until the potatoes are tender. Drain well and transfer to a large bowl.

2 Add the olive oil and season with salt and pepper. Mash with a potato masher until almost completely smooth. Stir in the chives, then set the mash aside and keep warm.

3 Crush the remaining garlic cloves and place in a small bowl with the rosemary, mustard and some seasoning. Rub this mixture all over the lamb chops.

4 Preheat the grill to a high heat.

5 Cook the lamb (hops under the grill for four minutes per side for medium-rare, or to your desired level of doneness. Serve the lamb chops with the garlic mash.
