soaked Red masoor or Yellow moong dal – 1 cup
Ripe bananas – 2 medium to large plus a tbsp of maple syrup
Flaxseed powder – 2 tbsp
Water – 5 tbsp (for flax egg)
Baking powder – 1 tsp
Baking soda – ½ tsp
Apple cider vinegar – 1 tsp
Salt – a pinch
Instruções
Preheat oven to 180°C. Blend soaked masoor/moong dal with bananas and maple syrup into a smooth, thick batter.
Mix flaxseed powder with water, rest 5 minutes to form flax egg. Add to batter.
Add baking powder, baking soda, salt, and apple cider vinegar. Mix gently. Pour into a lined baking tin.
Bake for 35–40 minutes or until a toothpick comes out clean. Cool completely before slicing.
