Ad - The cauliflower slowly cooked in milk and paired with Gorgonzola Pdo makes a perfect creamy sauce and healthier version of mac and cheese but without losing that cosy and comforting feeling.
Instead of baking it in the oven to get the usual crust I made the most of the cauliflower by using the leaves to make a golden and crispy pangrattato to serve on top.
I was challenged to make a dish that represents a unique characteristic of Gorgonzola Pdo and mine was that it’s an irresistible mood food! It contains tryptophan boosting serotonin so it literally lifts your mood.

200g short pasta
1/2 medium cauliflower (about 250g), including leaves
150ml whole milk
80g Gorgonzola Pdo
Freshly ground black pepper to taste
100g sourdough stale bread
A few sprigs of fresh thyme
1 garlic clove
Extra virgin olive oil
Salt to taste
