Spiced Chicken, Bean & Cabbage Stew đ¶ïžđ„„
Season 500g chicken thighs with taco seasoning (recipe on my page)

Preheat a heavy pot
Add 1 tbsp oil (any neutral oil of your choice)
Add chicken thighs, cook 1 minute on medium heat
Sear on both sides for 2â3 minutes until golden and caramelised
Remove chicken from the pot
Add 1 tbsp butter to the pot on medium heat
Add œ head of roughly sliced cabbage
Put the lid on top to wilt the cabbage
Once the cabbage has reduced by 50%, add 3 chopped garlic cloves
Cook for 2 minutes more until fragrant (until you can smell the garlic)
Deglaze the pot with 1â2 tbsp white wine
Scrape the bottom to lift the fond
Cook the wine until fully reduced
Add 1 can coconut milk
Add 1 can cannellini beans (in water, with liquid)
Fill the coconut milk can with water and add it to the pot
Add 1 tbsp homemade chicken stock OR 1 stock cube (optional, but great for flavour)
Add chicken thighs back in
Add roughly chopped cauliflower (optional)
Bring to a boil
Reduce to a gentle simmer
Cook for 10â15 minutes until chicken is fully cooked
Taste and adjust seasoning if needed
Then stuff your gob âš
A Few Wee Tips & Notes đȘ
Chicken thighs are very forgiving and stay tender even if cooked longer
All veg is optional - add or omit whatever you like
To make it vegetarian: start with 2 sliced onions, season with taco mix, cook until soft, then follow the same steps from butter onward
This can easily be made dairy free by replacing the butter with a small bit more oil before the cabbage goes in
Salt brings out natural flavour - even though it looks like a lot in the video, itâs still less than whatâs in pre-made sauces and packet mixes

Always taste at the end - thatâs when you know if it needs a pinch more salt
This works great as a stew on its own, over mash, a pie filling, or over rice
This would of been incredible finished with some chopped fresh cilantro/coriander
