Chicken Avocado Melt Sandwich (Lunch)

2 cooked chicken breasts, shredded or sliced (about 300 g)
1 ripe avocado, mashed
4 slices of your favorite bread (sourdough or ciabatta works best)
1 cup (100 g) shredded mozzarella or Monterey Jack cheese
2 tbsp (30 ml) olive oil or softened butter
1 tbsp (15 ml) lemon juice
½ tsp salt (3 g)
½ tsp black pepper (2 g)
½ tsp garlic powder (optional)
2–3 tomato slices (optional)
Fresh spinach or lettuce (optional)
Instruções
In a bowl, mash the avocado with lemon juice, salt, pepper, and garlic powder.
Spread avocado mixture onto two slices of bread.
Layer shredded (or sliced) chicken on top.
Add cheese evenly over the chicken.
Add tomato slices or spinach if using.
Close the sandwiches with the remaining bread slices.
Heat olive oil or butter in a skillet over medium heat.
Cook sandwiches 3–4 minutes per side until golden brown and the cheese is melted.
Slice and serve warm.
