Creamy Chicken Orzo

chicken thighs
2 tbsps butter
1 large onion, diced
4 cloves garlic, minced
3/4c uncooked orzo
Italian seasoning, TJs green goddess, salt, pepper
2c chicken broth
1c heavy cream (I use the nondairy one from Silk!)
juice from half a lemon
1/2c grated parmesan
3 handfuls of spinach
How to:
Instruções
Cook chicken thighs in Dutch oven, then remove but don’t wipe out the pan.
2 Melt 1-2tbsp of butter in the same pan over med high heat.
3 Add in one whole diced onion, and simmer until translucent before adding in 4 tbsp minced garlic and cook for another minute.
Add in 3/4c uncooked orzo, Italian seasoning, salt, pepper. Stir often for 2-3 minutes.
Add 2c chicken stock and 1c heavy cream, bring to a boil and simmer for 9-11 minutes or until to consistency you like! About half way I added the juice of half a lemon.
Add 1/2c grated parmesan and 3-4 handfuls of spinach. Stir together and simmer for a few minutes. Season to your liking!
