Fiesta Potato Bowls

Ingredientes

4-5 russet postatoes, peeled and sliced (add olive oil, onion powder, garlic powder, salt, pepper, chili powder & cayenne pepper)

1.5 Ibs ground beef

1 yellow onion (3/4 for meat, save 1/4 for topping)

1 package taco seasoning

2/3 cup water

2 tbsp butter

2 tbsp flour

1 tsp each salt, pepper, chili powder

1 cup milk

8 oz freshly grated mild cheddar cheese

Drizzle of sour cream

Tacobell sauce

Pico De Galo :

Juice of 1 lime

1 Roma tomato, diced

Handful cilantro, chopped

Salt & pepper to taste

Instruções

Start by making pico de galo. Chop onion, tomato and cilantro. Add 1/4 onion, tomato and cilantro to bowl, juice of 1 lime and season with salt and pepper.

Peel and dice your potatoes. Add to a bowl with olive oil and seasonings, mix well. Add to baking sheet and bake at 425ºF for 45 minutes flipping every 15 minutes. Crank the heat to 450°F and bake another 10-15 minutes until brown and crispy.

Add olive oil to a hot skillet and saute the remaining 3/4 of onion. Brown your ground beef in a pan, once almost fully cooked add taco seasoning, water and simmer for 5 minutes.

Make your cheese sauce. Melt butter in sauce pan, once fully melted add in flour and immediately stir to make sure you don’t get flour chunks. Season with salt, pepper and chile powder. Add in milk and stir in handfuls of cheese at a time until you get the consistency you like.

Assemble bowls. Layer potatoes, ground beef, cheese sauce, sour cream, pico de galo, and tacobell sauce!
