Salted Caramel Date Fudge

Ingredientes

8 oz dried, pitted dates

1/3 cup coconut oil

1/2 cup almond or cashew butter (or your favorite nut/seed butter)

2 tsp pure vanilla extract

1/2 tsp pink Himalayan salt

Other:

Boiling water (for soaking dates)

Flaky sea salt (optional, for topping)

Instruções

Soak the dates: Add dates to a bowl and cover with boiling water. Let soak for 5–10 minutes to soften. Meanwhile, melt the coconut oil.

Blend the fudge: Drain the dates and transfer to a food processor. Add the melted coconut oil, nut/seed butter, vanilla, and salt. Blend until smooth and creamy, scraping down the sides as needed.

Shape: Spread the mixture evenly into a parchment-lined loaf pan. Smooth the top and sprinkle with flaky sea salt, if using.

Freeze: Place in the freezer for at least 4–5 hours, or until fully set.

Serve: Once frozen, remove from the pan and slice into bite-sized squares. Enjoy, then store any leftovers in the freezer.
