Greek Baked Lamb And Potatoes

Ingredientes

1 shoulder of lamb with the bone, approximately 2 1/2 kg

1 1/2 kg potatoes

5 garlic cloves

1 onion

2 lemons, juice only

2 sprigs of rosemary

4 sprigs of thyme

salt, pepper, oregano

150 ml olive oil

Instruções

In a pot, place the meat and enough water to cover it, add the onion and 3 garlic cloves, cover, and simmer until the meat is tender and a knife goes in easily without falling apart, about 1 1/2 hours depending on the size of the pieces.

In a frying pan, heat 100 ml of oil, let it get hot, and add the potatoes. Sear them for a few minutes to make them more flavorful, crispy, and give them a nice color.

In a baking tray, place the meat in the center and the potatoes around it, along with the oil from searing.

Sprinkle salt, pepper, oregano, thyme, and rosemary all over, then add the lemon juice. After that, pour the broth from boiling the meat until it reaches about halfway up the meat, drizzle a little oil on top of the meat, and bake at 190 degrees Celsius for about 1 hour or until the dish has a nice color, the moisture has evaporated, and it remains in its own oil.
