Tis the Best Season to Make My Mom’s Xmas Sandwich Cookies

Ingredients for the cookies:
1 cup soft butter
1/3 cup whipping cream
2 cups sifted flour
YES THERE IS NO SUGAR.
Ingredients for the frosting:
1/4 cup soft butter
3/4 cup sifted powdered sugar
1 tsp vanilla (or more if you’d like)
Instruções
Mix together the ingredients for the cookies until it’s fully combined and CHILL for at least two hours (important !!)
Once chilled, take 1/3 of the dough out at a time and roll it out on a surface lightly covered with flour until it’s about 1/4 inch thick
Cut out circles of dough using a cookie cutter or something of the sort (we used a kombucha cap lol)
Coat both sides of the circles in sugar (granulated or crystallized) and poke each circle 3-4 times with a fork
Bake on an ungreased baking sheet for 7-9 minutes at 375 degrees
Let cookies cool before frosting
Mix the frosting ingredients and put between two cookies and ENJOY!!! Can be eaten right away but we like to store ours in the fridge bc we like them better cold.
