Chicken Stew

Main Ingredients:
1.5 lbs (700g) bone-in chicken thighs (or use boneless thighs for easier shredding)
1 medium onion, chopped
3 medium carrots, sliced
2 medium potatoes, diced (or sweet potatoes for extra sweetness)
3 cloves garlic, minced
2 cups chicken stock
1 cup diced tomatoes (fresh or canned)
1 tablespoon tomato paste
2 tablespoons olive oil
Seasoning and Spices:
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon chili flakes (optional)
1 bay leaf
Salt and pepper to taste
Optional Add-ins:
1 cup green beans or peas (added at the end)
1/4 cup heavy cream or coconut milk for creaminess
Fresh parsley for garnish
Instruções
1. Sear the Chicken
Heat olive oil in a large pot or Dutch oven over medium heat.
Season the chicken thighs with salt, pepper, and smoked paprika. Sear on both sides until golden brown (about 4-5 minutes per side). Remove and set aside.
2. Sauté Aromatics
In the same pot, add the chopped onions and garlic. Sauté until softened and fragrant.
3. Add Veggies and Tomato Paste
Stir in the carrots, potatoes, and tomato paste. Cook for 2-3 minutes to caramelize the paste slightly.
4. Add Liquid and Spices
Pour in the chicken stock and diced tomatoes. Add thyme, oregano, chili flakes (if using), and the bay leaf. Stir to combine.
5. Simmer the Stew
Return the seared chicken to the pot. Ensure the chicken is submerged in the liquid. Bring to a gentle boil, then reduce heat to low and cover. Simmer for 45-60 minutes, or until the chicken is fall-apart tender and the vegetables are fully cooked.
6. Shred the Chicken
Remove the chicken from the pot and discard the bones if using bone-in thighs. Shred the meat using two forks, then return it to the stew.
7. Finish the Stew
Add green beans or peas if using, and let them cook for 5-7 minutes. For a creamy version, stir in heavy cream or coconut milk.
8. Adjust and Serve
Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley and serve hot.
Notas
Similar to chicken curry. Can add masala and coconut cream instead of cream to make it more curry
