San Francisco Shrimp Louie

2 pounds raw shrimp, peeled and deveined
3 tablespoons freshly squeezed lemon juice
Handful of dried bay leaves
Garlic, ginger, star anise, or other aromatic of choice (optional)
Salt
FOR THE TRUFFLE MAYO
DRESSING
½ cup truffle mayonnaise
3 tablespoons freshly squeezed lemon juice
½ tablespoon chili sauce or sriracha
1 teaspoon
Worcestershire sauce
1 teaspoon olive oil
1 teaspoon white vinegar
Salt and freshly ground black pepper
6 to 8 butter lettuce leaves, washed and dried, or another wrap of choice
OPTIONAL TOPPINGS
½ avocado, cut in chunks
1 jalapeño pepper, sliced
½ red onion, finely sliced
2 to 3 tablespoons capers
1 tablespoon finely chopped fresh chives
1 teaspoon crushed red pepper flakes
Instruções
1. Bring a medium pot of water to a boil. Add the shrimp, lemon juice, bay leaves, other aromatics (if using), and a couple of pinches of salt.
2. Boil for 60 to 75 seconds, until the shrimp turn orange or pink. Drain and immediately place in a bowl of ice water for 15 to 20 seconds to stop the cooking. Drain the ice water, then dab the shrimp dry with a paper towel. You may leave them whole or slice them into bite-sized pieces.
3. For the truffle mayo dressing: In a mixing bowl, combine and add the truffle mayo, lemon juice, chili sauce, Worcestershire sauce, olive oil, and vinegar. Mix well, add salt and pepper to taste, and adjust any of the other seasonings to your liking.
4. Add the shrimp to the sauce bowl and toss gently until they are evenly coated.
5. Place the shrimp onto the lettuce leaves. Add any of your favorite toppings from the suggested list and serve right away.

Inspired by the classic San Francisco Crab Louie dish, these Shrimp Louie lettuce cups are light, refreshing, and super filling. I use butter lettuce instead of salad and juicy shrimp in place of crab meat. The shrimp is tossed in a zesty truffle mayo dressing with a choice of toppings like avocado, jalapeño pepper, red onion, or whatever tastiness you're craving! The shrimp cooks super quick, so this recipe will be made in a flash. It's one of those flavorful classics for when you are tight on time but want to impress with ease.
