I truly would’ve never thought to combine chocolate and carrot but IT IS PERFECT.
This cake is so moist, fluffy, and EASY AF. i was told it deserves a @paulhollywoodbakes handshake so… get baking!👀
RECIPE
300g (about 3-4 large) carrots
3 large eggs
300g (1 ½ cups) granulated sugar
180g (¾ cup) avocado oil
2 tsp (2 tsp) vanilla extract
1 tsp (1 tsp) apple cider vinegar
200g (1 ⅔ cups) all-purpose flour
40g (⅓ cup) cornstarch
10g (2 tsp) baking powder
4–5g (¾–1 tsp) salt
BRIGADEIRO
1 can sweetened condensed milk
2-3 tbs cocoa powder
Pinch of salt
1 tbs butter
Chocolate vermicelli sprinkles
Blend carrots, oil, eggs and sugar till smooth and emulsified (about 5 minutes). Add a ACV and vanilla, blend. Sift all dry ingredients into a bowl. Mix drys into wet until just combined. Pour into a greased and floured bundt pan. Bake at 325F for 50-60 minutes. Let cool in the bundt for 10 min then turn onto a wire rack. Cool for 1-2 hours. Make your brigadeiro by combining the ingredients and cooking down on the stove until thick. Pour over your cake and add your sprinkles. EAT AND ENJOY AND SHARE WITH YOUR FAMILY AND FRIENDS!!🫂🫂�
