Feta and Zucchini Muffins

Ingredientes

4 zucchini

2 eggs

100 grams feta, crumbled

½ onion, finely chopped

1½ cups almond meal

3 tablespoons chopped fresh or dried parsley

2 tablespoons grated parmesan cheese

2 tablespoons chopped fresh or dried dill

2 tablespoons chopped fresh or dried mint

1 tablespoon extra-virgin olive oil

salt and pepper

Instruções

1. Preheat the oven to 200°C. Brush a muffin tray with olive oil then line with baking paper or muffin cases.

2. Grate the zucchini, place in a bowl, sprinkle with salt and let it sit for about 10 minutes. Squeeze out the excess water and set aside.

3. Mix the remaining ingredients in a large bowl and add the zucchini. Combine, then scoop into the muffin cases and bake until golden brown, about 30 minutes.
