CHARLIE: All-purpose Stir-fry Sauce

½ cup (125 ml) light soy sauce
½ cup (125 ml) oyster sauce
¼ cup (60 ml) Chinese cooking wine
¼ cup (30 g) cornflour
1 tbsp white sugar
2 tbsp sesame oil*
1 tsp white pepper
Instruções
Make Charlie - Place all the ingredients in a jar and shake well to combine. Store Charlie in the fridge and shake well before use. Use for any of the recipes in this chapter. To use - Mix 3 tablespoons of Charlie with ⅓ cup (80 ml) water to make a stir-fry or stir-fried noodles for two people. Or see page 137 for My Stir-fry Formula!
Quantity - Makes 1½ cups (375 ml) of Charlie, enough for 16 serves of stir-fries or noodles
