Chicken Tortilla Soup from Kevin

Ingredientes

2T Olive oil

2C chopped Onion

6 cloves chopped garlic

2 chopped /seeded jalapenos - only sud one jalapeno

3t Kosher salt

3t ground Cumin

3t ground Coriander

2 14 oz cans red beans - drained

2 14 oz cans black bean - drained

32 oz frozen corn - white preferred

2T tomato paste

12 C chicken stock - 2 large cans

1 Rotisserie Chicken

½ cup chopped cilantro leaves

4 tsp fresh lime juice packaged tortilla chips shredded cheese

Instruções

In a large pot sauté onions, garlic and peppers until onions become soft and translucent. Add the salt, cumin, coriander and tomato paste. Stir and cook for 1 minute. Add the chicken stock and ½ of the red beans, black beans and corn. Simmer for 20 minutes. Puree the soup with an immersion blender. After pureeing, add the remainder of the red beans, black beans and corn. Add the shredded chicken, lime juice and cilantro. Cover and keep warm. Serve with tortilla strips and shredded cheese.
