Yvette’s Chicken and Sausage Gumbo

1/2 jar of savoie’s roux
one whole chicken
1 white onion
almost entire bulb of Garlic
1 andouille smoked sausage
parsley
scallions
black pepper
Tony’s
White rice
Saltine crackers
6 soft boiled eggs
Instruções
1. boil chicken 45 mins & remove (do not drain water)
2. add water if necessary & add roux until color is good
3. debone chicken during step 2
4. once water is a good color, add garlic, onions, sausage, scallion whites, and parsley to pot, boil 30 mins (add Tony’s and black pepper)
5. Add chicken back in, boil 30 more minutes
6. Add scallion greens, boil 15 more minutes
7. Season to taste if necessary
