This is one of those simple-but-powerful plates: crispy roasted tofu, vibrant broccoli, toasted almonds, and a creamy lemon sauce that ties everything together.

Light, nourishing, and still deeply satisfying — perfect when you want real food without heaviness.

Ingredients (1 serving)

Roasted tofu

200 g firm tofu, pressed & cubed

1 tsp olive oil

1 tbsp soy sauce

½ tsp smoked paprika

Black pepper

Broccoli & almond crunch

250 g broccoli florets

20 g almonds, roughly chopped

1 tsp olive oil

Salt to taste

Lemon sauce

2 tbsp soy yogurt or soy skyr

1 tbsp tahini or almond butter

Juice & zest of ½ lemon

1 small garlic clove, grated

Salt to taste

Instruções

Preheat oven to 200 °C (390 °F)

Toss tofu with oil, soy sauce, paprika & pepper

Roast 20–25 min until golden and crispy

Steam or blanch broccoli 3–4 min until bright green

Toast almonds in olive oil until lightly golden

Toss almonds with broccoli and salt

Whisk all lemon sauce ingredients until creamy

Serve broccoli topped with tofu, almond crunch & lemon sauce
