Freezer Friendly Baked Oatmeal

Ingredientes

1/2 cup Butter

2 Eggs (large)

3/4 cup Brown Sugar

2 tsp. Baking Powder

1 ½ tsp. Vanilla Extract

1 tsp. Cinnamon

1/2 tsp. Salt

1 cup Milk

3 cups Oats (regular or quick oats)

Add-ins as desired: nuts, dried fruit, frozen fruit, cocoa powder, coconut

Instruções

Grease a 13x9 pan, or 2 8x8 pans, an 8-loaf mini loaf pan, or a muffin tin. Set aside.

In a large bowl, add butter and melt in the microwave. Then add brown sugar and eggs and mix well. (If you have an induction stove just use a steel bowl and melt your butter on the stove.)

Add baking powder, vanilla extract, cinnamon and salt and mix well. Add your additions.

Stir in milk and oats until well combined. Pour batter into prepared pan(s).

To Bake: Preheat oven to 350 degrees and bake for 35-45 minutes or until center is set. 25-30 min for mini loaves.

To Freeze: Pour batter into prepared pan and cover with plastic wrap and then foil. Or pour batter into smaller foil pans, cover in plastic wrap and then place entire pan in freezer bag.Thaw overnight in the refrigerator before baking in the morning following above directions.

Favorite variations:

Cherry almond chocolate - dried or frozen cherries + slivered almonds + almond extract + cocoa powder

Almond joy - almond slivers + cocoa powder + coconut
