sand WHITING with a warm dressing of tomato, oregano and pin

125ml extra virgin olive oil
3 tablespoons diced tomato
I tablespoon toasted pine nuts
2 teaspoons oregano leaves
juice of 1 lemon
4 x 160 g whiting fillets, with skin on, bones removed
Instruções
Put the olive oil in a saucepan and heat until warm. Add the tomato, pine nuts, oregano and lemon juice and season with salt and pepper. Heat a touch of oil in a frying pan or on a barbecue plate and cook the whiting, skin side down, until golden, then flip over and cook for another minute (be careful not to overcook)
Lift the fish onto plates and spoon the warm dressing over the top. Serve with lemon wedges.
