Tuscan Vegetable Soup

Ingredientes

1 T olive oil

1 medium onien, chopped

1 cup cabbage

1 cup diced celery (about 2 stalks)

1 cup diced zucchini (about 1 medium)

2 cloves of garlic, minced

1 T chopped fresh thyme (or 1tsp dried)

1 T chopped fresh sage (or 1/2 tsp, dried)

½ tsp, sea salt

¼ tsp, ground pepper

4 cups low sodium, fat free chicken broth

1 14,5 oz, can diced tomatoes with juice

2 handfuls spinach leaves (about 2 cups)

Instruções

Directions: Heat oil in a medium-sized soup pot over medium high heat, Add veggies and spices (onion thru pepper), and cook, stirring occasionally, until the vegetable are tender, about 5 minutes,

Add the broth and tomatoes and bring to a beil, add the spinach leaves and cook the spinach until wilted, about 3 minutes more,

You can use an immersion blender to smooth out the veggies and disquise them for your family
